Filipino polvorón comes from the Spanish “dust” cookie. And when you bite into one, you’ll see why they're called that: they're so crumbly you probably won’t be able to dunk them in your coffee (unless you're brave!) Unusually, these cookies aren’t baked – they’re literally compressed with force, and the ingredients (flour, sugar, milk powder, coconut shortening) just…stick together. These ones are flavored with ube, a purple yam from the Philippines. And they’re yam-azing. (Sorry.)
