Shortbread-style cookies have been popular in Spain for hundreds of years. In the 8th century, Arab colonizers brought with them a type of cookie called “ghoriba” that closely resembled modern-day shortbread and was made with butter. Local Spaniards eventually began making their own versions of the cookie but using pork lard in place of butter. At the time, pigs were common livestock animals in Spain (they still are today), and pork products were much easier to come by than butter. These Matecado cookies are made in the traditional way, with lard, and they’re flavored with lemons, which grow abundantly in the warm Spanish climate, lending a fresh citrusy fragrance to these extremely crumbly shortbread cookies.
