Cheese Souffle

Cheesy, fluffy and surprisingly easy to make!

  • 4 large eggs
  • 13.5 oz of milk
  • 5 oz. of grated gruyere or swiss cheese
  • 1/2 cup flour
  • 1/2 cup butter
  • Nutmeg
  • Salt


  1. Preheat oven to 350 degrees on convection bake/fan setting if possible
  2. Heat butter in a saucepan on low heat, add flour and stir quickly for 1 minute
  3. Add the warmed milk and stir with a whisk for 1-2 minutes or until combined
  4. Remove pan from heat
  5. Separate the egg whites from yolks one by one then beat the whites thoroughly with a whisk, adding a pinch of salt
  6. In the cooled pan of butter, flour and milk, add the egg yolks one by one, then the grated cheese
  7. Add a pinch of nutmeg, pepper and salt to taste
  8. Add the beaten egg whites, mixing gently
  9. Pour mixture into a round baking dish
  10. Bake for 35 minutes
  11. Remove, allow to cool, slice and enjoy!
