Prep Time: 15 minutes
Cook Time: 1-2 minutes in Pan and 5 minutes in Oven
Servings: 2 servings
Ingredients
- 4 slices of good white bread (brioche or pain de mie works great)
- 4 slices of ham
- 1 cup shredded Gruyère or Emmental cheese
- 2 tbsp butter (for the pan)
- Béchamel sauce:
- 1 tbsp butter
- 1 tbsp flour
- ½ cup milk
- Salt, pepper, pinch of nutmeg
- Chef’s note: Gruyère gives that real Parisian café taste, it melts beautifully and adds flavor
Preparation
Make the Béchamel
- Melt 1 tbsp butter in a small saucepan.
- Add 1 tbsp flour and whisk 1 minute.
- Pour in the ½ cup milk, whisking until thick and smooth.
- Season with salt, pepper, and a tiny pinch of nutmeg.
- Set aside.
Assemble the sandwiches
- Spread a thin layer of béchamel on two slices of bread.
- Add a slice or two of ham and a generous handful of cheese.
- Close with the remaining bread slices.
- Spread a thin layer of béchamel on top and finish with more cheese.
- Chef tip: Don’t be shy with the cheese — the “gratinée” top is what makes it iconic.
Cook
- Heat a pan on medium with a little butter, just to toast the bottom.
- Cook the sandwiches 1–2 minutes to lightly crisp the bread.
- Transfer them to the oven and broil 5 minutes until bubbly and golden.
- Tip: If you want a Croque Madame, simply add a fried egg on top.
