Horiatiki
Horiatiki, or Greek salad, is a classic dish that embodies the simplicity of Greek cuisine. A combination of fresh tomatoes, cucumbers, red onions, Kalamata olives, and feta, it's perfect for any meal. I eat this every day in Greece, and when paired with a side of fries and a carafe of house wine, it makes for the perfect "girl dinner!

Ingredients
- 4 medium tomatoes or 1 pint of small colorful tomatoes
- 1 cucumber
- 1 red onion
- 1 red pepper
- 1 yellow pepper
- 1/2 cup Kalamata olives
- 200g (7 oz) feta cheese
- Capers
- 1 tsp dried oregano
- 1/4 cup olive oil
- Flaky salt
Preparation
- Cut tomatoes, cucumbers, peppers, and onions into bite-sized pieces.
- Mix with olives, capers and top with the feta block.
- Drizzle with olive oil, sprinkle oregano, and garnish with flaky salt.
