Pasta al Pesto
You only need a handful of ingredients to make this delicious pesto pasta!

Ingredients
- Bucatini (spaghetti, linguine, or any other long noodle works great)
- Garlic
- Pine nuts
- Basil
- Olive oil (a quality, fruity extra-virgin olive oil is best here)
- Parmesan
Preparation
- Make the pesto by throwing the roughly chopped garlic, basil, pine nuts, and finely grated Parmesan cheese into a food processor (or use a traditional mortar if you're feeling old-school!). Pulse a few times until everything’s chopped, then keep it running while you drizzle in the olive oil until it’s nice and smooth. Season with salt and freshly ground black pepper, then give it another quick mix. Taste and tweak the seasoning if needed.
- Toss and season the hot pasta with the pesto in a large bowl. Gradually add the reserved pasta water, about ¼ cup at a time, until it’s nice and saucy. Season with more salt and pepper if you like, and top it off with extra Parmesan cheese.
