
Sancocho Colombiano
Sancocho is a hearty meat and vegetable stew. Colombian sancocho is a simple stew that typically consists of bone-in protein and nutrient-rich vegetables.

Ingredients
- 14 cups of water
- 2 lbs beef short ribs
- 2 lbs beef for stew
- 1 teaspoon cumin
- 3 teaspoon salt
- 3 ears of corn, cut into 2-3 inch chunks
- 1.5 lbs of yuca
- 3 carrots, cut into 2-3 inch chunks
- 3 green plantains
- 4 yellow potatoes
- 1 cup green onion, chopped
- 3 roma tomatoes, chopped
Preparation
- In a pot, add some water and set to medium heat. Add in your beef, yuca, corn, peeled green plantains, some celery, green onion, and salt.
- Cover and wait for it to cook.
- After around 15 minutes add your potatoes and cover again until everything is cooked (around 45 minutes-1 hour).
- Serve in a bowl with a side of rice and avocado.
- Add your "hogao" on top. Hogao: Slice in small cubes tomato, onion, green onion & cilantro. Sauté everything with avocado oil or oil of choice, add salt and your desired spices.
