Savory Soy Milk (鹹豆漿)

A warm, lightly tangy bowl of soy milk that curdles into a delicate, tofu-like texture, topped with
crispy youtiao and umami-packed seasonings.

Ingredients

  • 2 cups unsweetened soy milk
  • 1 tbsp rice vinegar (or black vinegar)
  • ½ tbsp light soy sauce
  • ½ tsp salt
  • 1 tsp sesame oil
  • 1 tbsp dried shrimp (optional)
  • 2 tbsp chopped scallions
  • 1 tbsp fried shallots
  • ½ cup youtiao (Chinese fried dough), chopped

Preparation

  1. Heat the soy milk until just simmering, then remove from heat.
  2. In a bowl, mix vinegar, soy sauce, salt, and sesame oil.
  3. Pour the hot soy milk into the bowl and let it sit for a minute to curdle slightly.
  4. Top with dried shrimp, scallions, fried shallots, and youtiao. Serve immediately.
