This will change your life. Think of a skepasti as a gyro quesadilla! It’s a delicious grilled pita sandwich stuffed with cheese, gyros meat, fries, tomatoes, and tzatziki. It’s one of my all-time favorite Greek street foods and a must-try when you're in Greece.
Prep Time: 15 minutes
Cook Time: 25-30 Minutes
Servings: 4
Ingredients
- 4 large pita breads
- 200g (7 oz) gyro meat (lamb or pork)
- 1 cup French fries
- 1 sliced tomato
- 1/2 cup tzatziki
- 1 tbsp olive oil
- Salt & pepper
- 500g (1 lb) boneless, skinless chicken thighs
- 2 tbsp olive oil
- Juice of 1 lemon
- 2 garlic cloves, minced
- 1 tbsp dried oregano
- 1 tsp paprika
- Salt & pepper
Preparation
For The Chicken:
- Preheat the oven to 400°F (200°C).
- Marinate chicken in olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper.
- Arrange chicken on a baking tray and bake for 25-30 minutes until golden.
- Slice the cooked chicken for use in gyros.
To Assemble:
- Grill pita on both sides until golden.
- Pan heat gyro meat until crispy.
- Air fry fries until crispy.
- Assemble pita with tzatziki, gyro, cheese, tomato, and fries.
