The Crepes
Crêpes are very thin, delicate French pancakes made from a simple batter of flour, eggs, and milk, cooked on a hot pan or griddle.

Ingredients
- 1 cup all-purpose flour
- 2 cups milk
- 3 large eggs
- 2 tablespoons melted butter
- 1 tablespoon sugar (optional, but great for sweet crêpes)
- 1 pinch of salt
- 1 teaspoon vanilla extract and orange aromes (optional but delicious)
Preparation
- In a large bowl, whisk together the flour, sugar, and salt.
- Add the eggs in the center and start whisking gently.
- Slowly pour in the milk while whisking to avoid lumps.
- Add the melted butter and vanilla.
- Let the batter rest for 20–30 minutes (important for thin, soft crêpes).
- Heat a crêpe pan or a nonstick skillet and lightly grease it.
- Pour a small ladle of batter and swirl the pan to spread it into a thin layer.
- Cook for about 1 minute on each side.
