The Crepes

Crêpes are very thin, delicate French pancakes made from a simple batter of flour, eggs, and milk, cooked on a hot pan or griddle.

Ingredients

  • 1 cup all-purpose flour
  • 2 cups milk
  • 3 large eggs
  • 2 tablespoons melted butter
  • 1 tablespoon sugar (optional, but great for sweet crêpes)
  • 1 pinch of salt
  • 1 teaspoon vanilla extract and orange aromes (optional but delicious)

Preparation

  1. In a large bowl, whisk together the flour, sugar, and salt.
  2. Add the eggs in the center and start whisking gently.
  3. Slowly pour in the milk while whisking to avoid lumps.
  4. Add the melted butter and vanilla.
  5. Let the batter rest for 20–30 minutes (important for thin, soft crêpes).
  6. Heat a crêpe pan or a nonstick skillet and lightly grease it.
  7. Pour a small ladle of batter and swirl the pan to spread it into a thin layer.
  8. Cook for about 1 minute on each side.
