When chocolate first arrived in Spain, the local Cistercian monks used it to make a hot-cocoa-style drink, similar to that enjoyed by the Aztecs, which they made and sold to the nobility. Nobody aside from the monks knew how to make this chocolate drink, and they kept their recipe a secret for almost 100 years. While the drink was originally enjoyed without sugar, the Spanish eventually began to sweeten their hot chocolate to offset the bitter flavor, paving the way for the sweetened chocolate bars and truffles we know and love today. Traditional Spanish truffles are made from dark chocolate, condensed milk, and rum (or other liqueurs). This chocolate bar is a modern take on those classic truffles—it’s filled with a creamy chocolate center, just like a truffle.
