Czech Sausage Goulash
When the weather starts turning cold, the Czechs turn on their stoves to make goulash—a hearty stew made from meat, potatoes, and other in-season ingredients. When we first tried this version called Buřtguláš, made from smoked sausage and caraway seeds, we knew we just had to share it with you. And the best part? It only takes one pot to make it!

Ingredients
- 2 tbsp lard or vegetable oil
- 3 medium onions, roughly chopped
- 1 tsp ground caraway seeds
- 1 lb sausage (we recommend kielbasa), cut into 1-inch pieces
- ¼ cup all purpose flour
- 1 lb potatoes, peeled and cut into 1-inch cubes
- 2 cloves garlic, peeled and crushed
- 1 tbsp sweet ground paprika
- 2 ½ - 3 cups beef or chicken broth
- Salt & pepper to taste
Preparation
- Heat the lard or oil in a large pot over medium-high heat, then add the onions and fry, stirring often, until slightly golden.
- Add the crushed caraway seeds and sausages. Sauté for 2 minutes.
- Sprinkle with flour and fry for 1 minute, stirring constantly.
- Add the potatoes, garlic, and paprika, then sauté for 1 minute.
- Pour in the broth so that the potatoes and sausages are just covered. Stir well and bring to a boil.
- Reduce heat to a simmer, then cover with a lid.
- Let the goulash simmer, stirring occasionally for 20 minutes until potatoes are soft.
- Season with salt and pepper, and enjoy!
